Potato Parsley And Green Onion Soup Recipe

Ingredients:
4 cups chicken stock
1 large russet potato, peeled and cut into 1/2 inch pieces
1/2 cup chopped, fresh parsley
1/2 cup green onions, sliced into 1/4 inch pieces
1 1/2 cup cooked baby potatoes cut into 1/4-inch cubes
Directions:
Place chicken stock in 3-quart sauce pan and add potatoes. Cook until potatoes are soft. Using an immersible blender, blend potatoes and stock until smooth. Add parsley and onions and blend until creamy. Add cooked baby potatoes and cook until they're warmed through.
