ingredients

16 ounces cream cheese, softened
2 ounces unsweetened chocolate (squares), melted
1/2 cup sugar substitute (e.g., Equal, Aspartame, Sweet 'n Low)
1 teaspoon vanilla extract
1/2 cup chopped pecans

directions

In a small mixing bowl, beat the cream cheese, chocolate, sweetener and vanilla until smooth. Stir in pecans.

Pour into 8-inch square baking pan lined with foil. Cover and refrigerate overnight.

Cut into squares. Serve chilled.

    I didn't like this much, either; too bitter and rubbery. So I used a box of sugar free instant pudding and 1/2 cube of real butter instead of the unsweetened chocolate. Still a little rubbery, but much lighter and sweeter.

    I'm so relieved to discover I am not alone in my assessment. There must be a misprint in this recipe ... I love the ingredients but like the reviews, I don't think there is enough chocolate or sweetner ... not only does it not taste like fudge, the only thing I can think to do with it is put it on a bagel and that doesn't sound too appetizing either. I am diabetic and always looking for a good non-sugar recipe to satisfy my sweet tooth!

    This recipe is too cream cheese-y and not fudge-y enough. I tried more sweetener and more vanilla to make it test less like bitter chocolate flavored cream cheese and it did not work. I'm still on a quest to find a good SF fudge!

    I'm sorry I am always looking for new fudge recipes and I tried this one for a friend who loves fudge but just found out she is diabetic. I am sorry but it is very bitter.

    I just found out I was a diabetic & thought I would try this recipe. I don't want to be rude or mean but it doesn't resemble fudge at all. It is very rich & bitter. I had to throw it out I couldn't even eat it. Sorry .
