Zesty Slow Cooker Cajun Seafood Stew

ingredients
1 medium onion, thinly sliced
2 cloves garlic, finely chopped
1 tablespoon chili powder
2 tablespoons Cajun spices
1 teaspoon Tabasco sauce
1 1/2 cup chicken broth
1 1/2 cup V-8 Juice
1 can (14.5 ounce size) diced tomatoes with green chiles, undrained
1 cup chopped yellow bell pepper
1 1/2 cup frozen uncooked cleaned shrimp (small salad shrimp or larger your preference)
12 ounces canned crab, drained and picked over
1 pound frozen cod or other lean fish fillet, partially thawed and cut into 1-inch pieces
chopped fresh cilantro or parsley leaves
sea salt & pepper to taste
2 cups long grain white, brown, or wild rice, cooked (optional)
directions
Mix chicken broth, V-8 Juice, and spices in crock pot; add onions, garlic, bell pepper, and tomatoes. Mix ingredients well together.
Cover and cook on Low heat setting for 7-8 hours (or on High setting for 3-4 hours) or until vegetables are tender.
Cook rice per instructions prior to proceeding to next step.
Stir in fish, crab, shrimp, cooked rice (optional) and cilantro/parsley.
Cover and cook on Low heat setting for 1 hour (High heat setting for 30 to 45 minutes) or until fish flakes easily with fork.
