Garbanzo beans, green onion, red onion, and chopped tomatoes are tossed with a simple white wine vinegar dressing.


Dressing
1 teaspoon dried oregano
2 tablespoons lemon juice
1 tablespoon white wine vinegar
1/4 cup olive oil
Salad
1 can (15 ounce size) garbanzo beans, drained
4 green onion, chopped
1 red onion, finely sliced
2 tomatoes, seeded and chopped
torn lettuce
salt and pepper, as needed
Combine the oregano, lemon juice, vinegar, and olive oil in a jar with a lid. Shake well.
Place the garbanzo beans, green onion, and red onion in a bowl. Pour the dressing over the beans and mix well. Cover the bowl and refrigerate for 20 minutes.
Gently stir the tomatoes and lettuce into the bean mixture. Adjust the seasoning with salt and pepper if needed. Serve immediately.

This is such a great but simple salad recipe. Brent loves garbanzos so I'm always looking for new ways to serve them. I especially liked the addition of lettuce.
