ingredients
1 cup couscous
1 1/2 cup boiling water
2 tomatoes, diced
1 red bell pepper, seeded & diced
4 scallions, chopped
15 ounces black beans, drained & rinsed
2 cups corn kernels
2 tablespoons minced fresh cilantro
salt and pepper, to taste
1 lime, juiced
directions
In a medium bowl, combine the couscous and boiling water, cover, and let stand for 10 minutes to absorb the liquid.
In a mixing bowl, combine the prepared couscous with the remaining ingredients. Chill before serving.

Fresh flavors but a little bland. I think it needs some minced jalapeno.

I made this salad with a few alterations. It was a little bland so I added cumin and chili powder and more lime juice.
