If you're ever in a pinch for pudding mix, it's easier to whip up than you think. Household staples like dry milk, cornstarch, and sugar are all you really need. Plus, once you start making your own you can invent all sorts of flavors and turn them into gifts.

1 1/2 cup instant dry milk powder
1 cup sugar
1 cup cornstarch
1/2 teaspoon salt
Combine all the ingredients and mix well. Store in an airtight container for up to 6 months.
To use, combine 1/4 cup of the mix and 1 cup of milk in a saucepan over medium heat. Whisk constantly until the pudding has thickened. If desired, add 1/4 teaspoon vanilla extract.
Remove the pan from the heat and let cool. Place the pudding in a bowl, cover, and chill until ready to serve.
1/4 cup of the mix will yield 2 servings of pudding.

Wow, this is amazing!!! I altered this recipe a little bit by adding a cup of French Vanilla Coffee Creamer, so there would be no need to add vanilla extract. I also ground this mix to a fine powder in a food processor to make it super smooth. Give this a try, you will be glad you did!!
