Something as basic as a side of green beans is elevated with a simple, effortless sprinkling of toasted nuts. Works wonders for both flavor and textural interest.
1 1/2 pound fresh green beans, trimmed
3 tablespoons butter
1/4 teaspoon black pepper
1/4 cup coarsely chopped salted pistachio nuts (or toasted pine nuts)
Place green beans in 3-quart saucepan; add enough water to cover. Cook over medium-high heat until water comes to a full boil. Reduce heat to medium. Cook until green beans are crisply tender (12 to 15 minutes). Drain.
Return beans to pan; add butter and pepper. Continue cooking, stirring occasionally, until butter is melted (1 to 2 minutes). Sprinkle with pistachio nuts.
You can substitute brussels sprouts for the green beans if desired.

Very easy yet tasty. Adding nuts such as pistachios to veggies really does a lot to dress them up both appearance and taste-wise. This could also easily be made with frozen or canned green beans.
