ingredients
1 1/2 pound purple or blue potatoes
1/2 cup whole milk
2 tablespoons butter
1 teaspoon salt
1/2 teaspoon white pepper
directions
In a medium saucepan, cover potatoes with salted water. Bring to a boil and simmer for 15 minutes or until potatoes are tender, but not mushy.
Meanwhile, combine milk and butter in a small saucepan. Heat to a simmer and set aside. Drain potatoes and return to low heat for 1 minute to dry them out. Remove from heat and mash with a potato masher or fork while adding warm milk mixture to potatoes. Season with salt and pepper.
