Spicy Garlic Ancho Mashed Potatoes

ingredients
2 whole russet potato
1 small sweet potato or yam
5 cloves roasted garlic
1 tablespoon sour cream
2 teaspoons butter
1 ancho chili
1/4 cup milk or cream
salt and fresh ground pepper
directions
Remove stem and seeds from chili. Re-hydrate in almost boiling water for 20-30 minutes. Cut into thin strips.
Roast unpeeled garlic on iron skillet until black in spots or in a 400 degrees F oven for 40 minutes.
Boil potatoes in salted water until fork tender, about 30 minutes.
Drain, add butter and mash. Add garlic and chili and mash again. Add milk, salt and pepper, then fluff the potatoes with a spoon.
