ingredients
2 cups mashed potatoes
2 egg yolks
1 tablespoon chopped parsley
2 egg whites
directions
Beat into hot mashed potatoes the egg yolks and parsley. Cool slightly.
Bet egg whites until stiff. Fold egg whites lightly into potato mixture.
Shape mixture into balls. Bake on a lightly greased cookie sheet until crisp at 375 degrees F. Turn to brown evenly.

This is a great way to use up leftover mashed potatoes which we had after having chicken fried steak and white gravy for dinner (yumm!). Couple of tips: You can make these into balls and freeze them if you don't want mashed potatoes for dinner right away again. I use a small ice cream scoop to make the balls and then put them on a baking sheet and put in the freezer until solid. Then I put them in a zip top bag. I then place them on a baking sheet at room temp for about 30 minutes then bake as directed. It doesn't say how long to bake them but you just cook them until they are browned. You can also add other seasonings to them. I've added cayenne, garlic, and even chopped cooked bacon. Lots of ideas.

I'm so excited about this recipe! The only reason I didn't rate this a '5' is because I haven't tasted them yet. While I LOVE mashed potatoes, I am in no way a cook. I have been looking for a fun, party-friendly way to serve mashed potatoes and here it is! I added roasted garlic to my potatoes and right now they're in the oven in their little ball shapes. The recipe didn't tell me how long to leave them in for, or at what temperature to cook them at, so I'll keep checking. A small price to pay for such a clever idea. Thanks for sharing this. It was super easy and fun to make! I think kids would enjoy this recipe as well.
