10 potatoes, peeled and quartered 1/2 cup butter 1/2 cup sour cream 1 egg salt, to taste
directions
Bring a large pot of salted water to a boil over medium-high heat. Add the potatoes and cook until tender. Drain well.
Add the butter to the potatoes and mash with a potato masher (do not use a mixer or the potatoes may get gummy).
Add half of the sour cream to the potatoes and mix well. Stir in the egg and beat by hand until completely incorporated. Add the remaining sour cream to taste along with the salt, as desired.
Serve hot.
