This recipe is so easy, you'll be able to make it in no time. This one-minute caramel icing is the perfect topping for any cake or cupcake.
1 cup firmly packed light brown sugar
1 cup granulated sugar
1/2 cup evaporated milk
1/2 cup butter
1 teaspoon vanilla extract
In a large cast-iron skillet, bring sugars, milk and butter to a boil over high heat. Boil for 1 minute.
Remove from heat. Pour into a heat-safe mixing bowl. Carefully beat with an electric mixer at high speed until icing reaches spreading consistency, about 15 minutes. Stir in vanilla. Spread on cooled cake.
Frosts 2 (8-inch) round cake layers or one bundt cake.

Do I need to let it cool before pitting on cooled cake? It turned out more like a caramel dip texture....
If you are beating the icing as directed (for around 15 minutes) it should be cooled and of spreading consistency.
Thanks for the recipe, it looks so delicious! I'd like to ask something though, I live in a hot and humid place, can the frosting hold its shape? I suppose I should add shortening, right?
It's hard to say without trying it. Is the cake going to be sitting out for a long amount of time? You might just have to experiment with a small batch.

I like this recipe because it's quick and tasty!! My one complaint is that my icing turned out grainy!! I used cream instead of canned milk, and I stirred the mixture before it boiled! My husband is a chef. He says don't ever stir the sugar if you plan to boil it! Any comments? :-)

So good and easy! I had no brown sugar, so added a tablespoon of molasses and made both the white sugar amounts. It is so good! I had a tad of trouble with it getting too thick while whipping (small pellets of caramel shooting everywhere!LOL!), but slipped in a tiny bit more butter while it was whipping, and it softened right up!! Next time I'll folloe your directions exactly!!!

I have been looking for a caramel icing recipe since I lost my mothers [which was the best ever] well I think I found my mums recipe. Great icing and taste just like my mums. My family went crazy over this recipe. I made a devil food cake and used this icing. They all thought i had gone mad, but when they tasted it all i heard was wow, aah, this is crazy delicious. I needed a carmel icing in a pinch over the holiday season. I have a large family and they are very critical when it comes to food. I made this icing for the first time. It was very simple. I spreaded this icing over a yellow cake. Everyone loved it. I give this recipe two thumbs-up!

I made this and put on a chocolate cake slightly warm with holes poked in the cake it was soooooo goooodd, you must cool it the entire 15mins.

I needed a quick and easy icing and this was it! Great flavor, nice consistency but be sure to beat it for the recommended 15 minutes or more. If you have a stand mixer, let it do the work and you can move on to another task.
