Caramel Frosting

Made with butter and brown sugar, this caramel frosting has a rich and thick texture that makes it perfect for topping cakes, cupcakes, and other baked goods.

ingredients

1/2 cup butter
1/2 cup packed light brown sugar
1/2 cup packed dark brown sugar (or use all light brown sugar)
1/4 cup whole milk or cream, plus more if needed
2 cups powdered sugar, sifted
1 teaspoon vanilla extract

directions

Combine the butter, light brown sugar, and dark brown sugar in a saucepan over medium heat. Heat, stirring occasionally, until the sugars melt and the mixture is bubbly. Let cook at a boil for 2 minutes.

Add the milk and bring the mixture to a boil, stirring frequently.

Remove the saucepan from the heat. Quickly stir in the powdered sugar and vanilla, mixing until the frosting is smooth and the ingredients are incorporated. If it seems too thick, add additional milk as needed.

Use the frosting while warm on a completely cooled cake or cupcakes.

    I tried this recipe and it was wonderful. It did crack but one lady said to put 1/2 cup of cream instead of 1/4. I will try this next time. But it really had a good taste and i had really no problem whatsoever. I would recommend this recipe.     Tonight I succeeded in making this recipe for an apple cake I also miraculously was able to make without too much klutzy mishaps. It was pleasantly surprisingly easier than I thought it would be! It is quite tasty. However, I would consider this recipe more of a drizzle or sauce than an actual frosting. Still, it seems to work and I hope my co-workers will enjoy the cake that I dared to make them!

    Awesome frosting...I had been looking for this recipe for a few years. I lost it in the process of a move. To insure that frosting spreads well, without the 'soft crackle look' after drying..add 1/2 cup of milk instead of 1/4 and then allow to cool...will be very creamy, spreadable, and not runny (if allowed to cool enough)!

    I just made this and it came out really runny. I was going use it for cupcakes but now...

    • Boiled frostings take some practice. It's like making fudge, it has to be boiled to just the right stage then beaten until it's thick. This recipe has several positive reviews which indicates it's not a problem with the recipe but perhaps the method for inexperienced cooks might be lacking in some way.

    When I asked my husband what kind of cake he wanted for his birthday he said a while/yellow cake but he would love to have caramel icing (like my grandmother used to make). That was a challenge for me. I made this icing and he oved it. It was fairly easy to make with ingredients I have on hand. It turned out buttery and creamy. He said I didn't have to wait for another birthday to make this cing. Thanks for a GREAT recipe.

    This is delicious frosting and easy enough to make. However, it seemed to me like a skimpy amount for a whole cake. I made a sheet style and there was not enough to do the sides. Next time I will add 50 percent more ingredients so I can decorate the cake more generously.
