These salmon patties are a fantastic change of pace for summer grilling. They are ready for a fork, or a toasted bun with tomato and red onion.

1 can (16 ounce size) salmon
1/2 cup crushed soda crackers
2 egg whites
1 tablespoon skim milk
1/8 teaspoon freshly ground black pepper
1/4 cup chopped green bell pepper
1/4 teaspoon dill
4 tablespoons fat-free mayonnaise
Start grill/light coals. Adjust the grate to be about 4 to 6 inches above the coals. Spray the top of a broiler pan generously with non-stick spray.
In a large bowl, combine all ingredients except salmon, dill and mayonnaise. Mix in the salmon; shape into equal balls and flatten. Place patties on the broiler pan.
When the grill is ready/coals are white, place the broiler pan on the grate. Grill the patties until they are crisp and slightly browned. Remove to warmed plates. Top with mayonnaise and sprinkle with dill.
