A penne for your thoughts... how does pasta with scallops sound tonight? Sounds like a million bucks with a bottle of white.
1 pound scallops
1 teaspoon grated lemon zest
1 pound uncooked penne pasta
1/3 cup olive oil
1 tablespoon minced garlic
2 roma tomatoes, chopped
1 teaspoon salt
1/4 teaspoon crushed red pepper flakes, or to taste
2 tablespoons chopped Italian parsley
4 tablespoons Parmesan cheese, grated
If the scallops are very thick, slice them into 1/4-inch thick rounds. Combine the scallops with the lemon rind and stir gently. Set aside.
Bring a large pot of water to a boil. Add the pasta and cook for 7 minutes or until al dente. Drain well.
While the pasta is cooking, heat a deep skillet over medium heat. Add the oil and cook the garlic, stirring constantly, until just lightly browned (do not let it burn). Add the tomatoes, salt, and crushed red pepper. Mix well and let cook for 5 minutes.
Add the pasta to the skillet along with the parsley and scallops. Mix well then cover the skillet and remove the pan from the heat. Let the scallops cook (off the heat) for 4-5 minutes or until opaque.
Stir the Parmesan into the mixture then serve hot.
