Special K Cookies Recipe

Ingredients:
1 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter
2/3 cup sugar
1 teaspoon vanilla
1 egg
3 cups Special K cereal
Directions:
Combine flour, baking soda and salt and set aside. Beat butter, sugar and vanilla until fluffy. Add egg. Stir in dry ingredients and 1 cup Special K. Coat teaspoons of dough with remaining Special K. Place on ungreased baking sheet. Bake at 375 for 10 minutes or until lightly browned.
