ingredients
2 cups flour
2 cups finely chopped pecans
1/4 cup sugar
1 cup butter, softened
1 teaspoon vanilla extract
powdered sugar
directions
Preheat oven to 325 degrees F.
In large mixer bowl combine all ingredients except powdered sugar. Beat at low speed, scraping bowl occasionally, until well mixed (2 to 3 minutes). Shape rounded tablespoons of dough into 1-inch balls.
Place 1-inch apart on cookie sheets. Bake for 18 to 25 minutes or until very lightly browned. Cool 5 minutes; then roll in powdered sugar while still warm. Let cool completely.
