Chickpea Cookies

ingredients
2 cups chickpea flour
1 teaspoon vanilla extract
3/4 teaspoon cardamom
1 egg
1 cup icing sugar
1/4 cup dried cranberries
1 cup butter, at room temperature
1 tablespoon water (more if needed)
1/4 cup raisins
directions
Preheat oven to 350 degrees F.
Cream butter and sugar together for about 5 minutes. Add egg, cardamon and vanilla and beat together for about 2 minutes.
Stir in chickpea flour and water. Then add the raisins and cranberries.
Drop dough by the spoonfuls, 2 inches apart, onto a greased or lined cookie sheet. Bake for 12 to 15 minutes or until edges are golden brown. Let cool on pan for 5 minutes.
