Cauliflower With Cotija Cheese

ingredients
1 medium cauliflower, cut into florets
1 tablespoon unsalted butter, at room temperature
1 tablespoon olive oil
1/2 teaspoon salt, or to taste
1/3 cup crumbled cotija cheese
2 teaspoons finely chopped fresh parsley or cilantro
directions
Cook the cauliflower in a large pan of boiling water until barely tender, about 4 minutes. Drain and return to the pan while hot.
Add the butter, olive oil, and salt. Stir very gently to melt the butter and coat the cauliflower.
Transfer to a shallow serving bowl or platter. Sprinkle with the cheese and parsley. Serve hot.

Another winner! If you can't find cotija cheese you can substitute parmesan (but ask at your grocery store because it really is good). You can cook the cauliflower longer if you prefer, just remember you will need to be more gentle when tossing with the olive oil/butter mixture because it will fall apart more. This is a very easy recipe but extremely tasty.
