Slow Cooker Kielbasa Stew

Kielbasa and cabbage makes a cold-weather stew that'll restore the warmth to your bones. Plenty of veggies ensure that it's filling and hearty, and it's simple to throw in a pinch or two of cayenne to turn up the heat.

ingredients

4 cups coarsely chopped cabbage
3 cups peeled, cubed potato
1 1/2 cup sliced carrots
1 pound cooked kielbasa, sliced
1/2 teaspoon dried basil, crushed
1/2 teaspoon dried thyme, crushed
1/2 teaspoon ground black pepper
2 cans (14 ounce size) reduced-sodium chicken broth

directions

In a 4-5-quart slow cooker combine cabbage, potato, and carrots. Top with kielbasa. Sprinkle basil, thyme, and pepper over kielbasa. Pour chicken broth over all.

Cover; cook on low-heat setting for 7 to 9 hours or on high-heat setting for 3-1/2 to 4-1/2 hours.

    I love this!! Fast and easy comfort food. I use regular chicken broth not the reduced sodium and use a whole teaspoon of basil and thyme and the flavor is great!!

    I have been making this recipe for 6 years. I have just misplaced my cookbook that I first came across this comforting meal which I was planning on making for dinner. I am overjoyed that I have found it here, but this meal will now be dinner for tomorrow

    It might depend on the kielbasa you use but the overall flavor of this was a little bland. Crockpots tend to mute the spices so I had to add more during the last 30 minutes of cooking. Our kielbasa wasn't very salty, combined with the low sodium chicken broth meant it definitely needed a little salt. Overall, I'd make it again. It was simple and filling, just needed a little extra flavor push.
