ingredients

1 pound Italian sausage links
1 medium onion, coarsely chopped
1 small green pepper, seeded and chopped
1 teaspoon minced garlic
1 can (28 ounce size) stewed sliced tomatoes, undrained
1 can (32 ounce size) kidney beans, rinsed and drained
1 teaspoon dried oregano
1 teaspoon dried basil

directions

Heat a skillet over medium-high heat. Add the sausage links and cook, turning frequently, until browned on all sides and cooked through.

Remove the sausages from the skillet and slice into 1/2-inch thick slices. Place the sausage in the crock pot along with the remaining ingredients.

Cover the crock pot and cook on low for 4 hours or until the vegetables are tender and the beans are heated through.

Serve hot.

  1. Valerie REVIEW:

Easy and tasty. I used hot Italian sausage for a little more flavor. I also used diced tomatoes, not whole. I'm not a fan of using whole tomatoes in a recipe like this where they don't really get broken up from stirring, etc. If you want to shorten the cooking time, saute the onion and green pepper before adding to the crockpot.
