1 1/4 pound lowfat turkey sausage or kielbasa, cut into 1-inch pieces 1 1/2 pound sauerkraut, drained 2 1/4 apples, peeled, cored and cut into rings 3/4 onion, sliced into rings 2 pounds red potatoes, quartered 1 1/2 cup chicken stock 1/2 teaspoon caraway seeds 1/2 cup non/lowfat Swiss cheese, shredded
directions
Place half the sausage in a crockpot and top with sauerkraut. Top this mixture with remaining sausage, apple, onion and potatoes. Add stock and caraway seeds.
Cover and cook on high for 4 hours. Top with cheese and serve.

This recipe has a delicious Octoberfest taste to it. The crockpot did a really good job with this. The sauerkraut gave it a nice tang.
