Chicken And Dumpling Casserole

ingredients
1/2 cup chopped onion
1/2 cup chopped celery
2 cloves garlic, minced
1/4 cup butter or margarine
1/2 cup all-purpose flour
2 teaspoons sugar
1 teaspoon salt
1 teaspoon dried basil
1/2 teaspoon black pepper
4 cups chicken broth
1 package (10 ounce size) frozen green peas
4 cups cubed chicken
DUMPLINGS
2 cups buttermilk biscuit mix
2 teaspoons dried basil
2/3 cup milk
directions
In a large saucepan, saute onion, celery and garlic in butter until tender. Add flour, sugar salt, basil, pepper and broth; bring to a boil. Cook and stir for 1 minute; reduce heat. Add peas and cook for 5 minutes, stirring constantly. Stir in chicken. Pour into a greased 13in. X 9in. X 2in. baking dish.
For dumplings: Combine biscuit mix and basil in a bowl. Stir in milk with a fork until moistened. Drop by tablespoonfuls onto casserole.
Bake, uncovered, at 350 degrees F for 30 minutes. Cover and bake 10 minutes more or until dumplings are done.

The dumplings turned out just like I like them. Most recipes don't get it right.
This is a great recipe to expand on! Instead of frozen green peas, I substituted green peas with mushrooms. I also added 1/3 cup sliced kalamata olives. For the dumplings I added 1/2 cup shredded cheddar! To each their own, but it was fantastic!

What a wonderful dish! Very delicious! However, it was VERY Peppery/spicy. Next time I'll reduce the pepper by at least half.

We agree this is a great recipe. Like dataop7 we used Bisquick for the dumplings and stayed on top of the stove. Clean up one pan and four bowls. I added frozen grenn beans one cup forzen corn two cups and frozen peas two cups and fresh cut carrots one cup. I also had to add an extra cup of water for the dumplings. This was a real hit with my wife and kids. This was also easy on me.
This was a great tasting recipe for chicken and dumplings! Usually when I make chicken and dumplings, I don't use a recipe, just use chicken pieces,make a chicken gravy and vary the veggies and seasonings, then use bisquick for the dumplings and drop them into the stew in the pan on top of the stove. Downfall is it never turns out the same by not using a recipe. Will use this one for now on but will continue to cook on top of the stove instead of baking as the dumplings seem to turn out much softer and fluffier this way. Less time and one less pan to clean!

what a great recipe! i too was looking for something to make in a short amount of time. i added carrots instead of celery, and used progresso chicken noodle soup for 1/2 of the broth. when you've been to the store already, and that's what you have... that's what's goin in the dinner! it was tremedous. my mom came over the next night to have a bite (as it's just me and bf in the house) and she loved it. she asked for the recipe right away. thanks for sharing it with us.

Great quick Chicken n Dumpling recipe. It was easy and very tasty it took overall 1 hour. You can add whatever vegatables you choice. Note: Recipe calls for 1/2 teaspoon pepper, we put alittle less and we found it to be still very peppery.

This is an awesome recipe! I was in search of a quick, good-tasting Chicken & Dumpling recipe to fix when time was tight. Boy did I find it! I ended up sending it to my neighbor, hot out of the oven, to feed her family and two of my kids she was watching. She requested the recipe! My kids (14 yog, 10 yob, and 6 yog) loved it. It is a keeper. My 6yod asked me to make it everyday, because it is so very tasty. :) I did modify the recipe some--I added 3/4 c. chopped carrots to the veggie saute and increased the onion & celery amount. I also was confused if the "cubed chicken" was raw chicken or the cooked, canned chicken. To be sure, I precooked my boneless, skinless breast pieces in a bit of butter, granulated garlic, and salt in a skillet. This is an excellent recipe. I think it would be a great potluck dish, too. I will definitely make it again!
