Mississippi Mud Pie Recipe

Ingredients:
1 prepared 9-inch pie shell
7 ounces semi-sweet baking chocolate
1 cup butter
1 tablespoon instant coffee
2 teaspoons hot water
3 eggs
2/3 cup half-and-half cream
3/4 cup packed dark brown sugar
2/3 cup whipping cream, whipped
Directions:
Preheat oven to 400F degrees. Bake crust 10 minutes. Set aside to cool completely. Reduce oven temperature to 375F degrees.
Combine the instant coffee and hot water until coffee is dissolved. Break chocolate into pieces and place in a heavy pan with butter and coffee mixture. Heat gently, stirring occasionally, until chocolate and butter have melted. Remove from heat. Cool mixture slightly.
Beat eggs and add to chocolate mixture along with half-and-half and sugar. Stir until well mixed. Pour filling into prebaked shell. Bake in preheated oven 30 to 35 minutes or until done. Remove from oven and cool completely. Serve with a spoonful of whipped cream on each piece.
