Coconut Almond Fondant

These bite-sized balls of sweetness are filled with coconut and almonds. A delicious sweet treat dipped in chocolate.
30-60 minutes
ingredients
1 cup unsalted butter, softened
2 pounds confectioners' sugar
1 can (14 ounce size) sweetened condensed milk
3 teaspoons vanilla extract
1 pound toasted coconut flakes
1 pound toasted sliced almonds
melted semisweet chocolate or dipping chocolate
directions
Place the butter and confectioners' sugar in a mixing bowl. Beat on medium speed with an electric mixer until combined.
With the mixer running, slowly add the sweetened condensed milk and vanilla. Beat until combined.
Stir the nuts and coconut in by hand.
Form the fondant into 1-inch balls. Dip each ball into the melted chocolate and then set on waxed paper to harden.
Store the fondant in an airtight container.
