Candied citrus peels make a stunning garnish for cakes and other pastries, but they're not just for show. They're delicious in their own right, especially when you give them a dip in dark chocolate.
3 firm, ripe oranges or lemons
1/4 cup granulated sugar, plus more for sprinkling if desired
1/2 cup water
Carefully peel the fruit using a vegetable peeler. Be careful to avoid including the white pith.
Cut the peel into strips.
Place the fruit peels in a saucepan with enough cold water to cover. Bring to a boil. Drain the water and then rinse the fruit peels under cold water.
Return the peels to the saucepan. Add the sugar and water. Bring to a simmer over medium heat and let cook until the liquid has evaporated and the fruit peels are brightly colored.
Spread the candied peels in a single layer on a sheet of aluminum foil or waxed paper. Let cool. If desired you can toss them with sugar.
Store the fruit peels in an airtight jar in the refrigerator for up to 6 months.

My MOTHER made this when we were growing up. We always had lots of large navel oranges and other fresh fruit in the house. I was looking for a candied orange peel recipe and chose this one because it doesn't use much sugar. And the method is simple and takes a short amount of time,like I remembered. The photo looks good too.
