This microwave recipe is a quick and convenient way to create sweet, candied citrus peels. In just under an hour, you can transform ordinary navel orange or lemon peels into a flavorful treat or dessert ingredient.
4 large navel oranges
OR
8 large lemons
9 cups hot water
3 1/2 cups sugar
Remove peel with white pulp from oranges. Cut into 1/8 inch strip. Place peel and 5 cups water in 2 1/2 quart dish, cover with plastic wrap and microwave 100 percent for 14 minutes. Drain and return to dish, add 4 cups water, recover and microwave for 14 minutes. Drain, rinse in cold water. Stir in 1 1/2 cups sugar. Cover loosely.
Microwave 10 minutes, stir, recover and microwave 10 minutes. Lightly oil 3 feet wax paper. Separate peel on paper so not touching. Let dry 2 hours or more. Put 2 cups sugar in bowl and toss small batches of peel in sugar. Air dry 2 hours and store in airtight container.

I only had one navel orange and a few oranges that had no title..weird! Even though I am feeding 7 people, I cut the recipe in half. The cooking time was too long, And directions weren't too clear. Also, I didn't understand if I would serve alone or as a topping or seasoning on a fancy cake. Other than that i would give it 4 stars :)
