ingredients
2 tablespoons unsalted butter (for pans)
6 large eggs
1 cup sugar
1/2 cup vegetable oil
1/2 teaspoon vanilla extract
1 lemon, juice and rind of
3 cups all-purpose flour
3 teaspoons baking powder
3/4 cup almonds, shelled
1 pinch salt
cinnamon, to taste
directions
Preheat the oven to 350 degrees F. With the butter, grease two 8 x 4 inch loaf pans.
In a large mixing bowl, beat eggs lightly. Fold in the sugar, oil and vanilla. Add the lemon juice and grate the rind into the mixture. Add flour, baking powder, almonds, and salt, stirring well.
Pour mixture into pans and bake for 45 minutes. Remove from oven.
When cool, slice the loaves and sprinkle the slices with cinnamon.
