3/4 pound pitted dates
1 teaspoon baking soda
1 cup boiling water
1/2 cup butter
1 cup white sugar
2 eggs
2 cups all-purpose flour
1 teaspoon vanilla extract
1 pinch salt
1/2 cup chopped walnuts

directions

Preheat the oven to 325 degrees F. Grease a standard loaf pan.

Coarsely chop the dates and place in a bowl. Sprinkle the dates with the baking soda and then add the boiling water. Let the dates stand for 5 minutes.

Combine the butter and sugar in a mixing bowl and beat on medium speed with an electric mixer until creamy. With the mixer running, add the eggs one at a time, mixing well after each addition. Slowly add the flour with the mixer running, scraping down the sides as needed. Stir in the vanilla, salt, walnuts, and dates with the liquid by hand until just mixed.

Pour the batter into the prepared loaf pan. Place the pan in the oven and bake at 325 degrees F for 1 hour 15 minutes or until the bread tests done in the middle.

Remove the pan from the oven and let the bread cool in the pan for 5 minutes then turn the loaf out onto a wire rack to cool completely. Store the bread in an airtight container.
