ingredients
1 cup sugar
1 cup flour
4 eggs
1/2 pound red candied cherries
1/2 pound green candied cherries
1/2 pound candied pineapple
1 pound pecan halves, not pieces
21 ounces dates
1 teaspoon baking powder
1 tablespoon vanilla (approximate amount)
directions
Beat eggs, add sugar and vanilla. Set aside.
Cut dates and pineapple and mix with whole cherries and whole nuts. Sift flour and baking powder over fruit mixture. Stir well to coat fruit and nuts. This prevents the fruit and nuts from sinking to the bottom of the cake.
Add this to the egg mixture and stir well. Bake for 1 hour at 300 to 325 degrees F.
