Really Rich Cream of Crab Soup

ingredients

3 tablespoons all-purpose flour
1 envelope (1 ounce size) dry Hollandaise sauce mix
1/2 teaspoon dry mustard
4 cups half and half
1/4 cup butter
2 teaspoons Old Bay seasoning
1/4 teaspoon celery seeds
1 cup whipping cream
1 1/2 tablespoon cooking sherry
1 pound Maryland crab meat

directions

In medium bowl, blend flour, Hollandaise sauce mix, and dry mustard with half of the half-and-half. Melt butter over medium heat in a 4-quart saucepan.

Slowly add above mixture to melted butter, stirring constantly to ensure smooth consistency. As mixture begins to thicken, add remaining half-and-half, Old Bay seasoning, celery seeds, and whipping cream. Heat to simmer, stirring constantly. Reduce heat to low, add crab meat and sherry. Stir gently until heated through, and serve. Top each bowl with freshly ground pepper to taste.

    To make this truly 5 stars, use real sherry and reduce the old bay to 1 teaspoon (unless, like lots of people, you like really salty food). Otherwise, this is a great recipe.

    This soup was FANTASTIC! The receipe was so easy and it tasted wonderful. I'm a big fan of cream of crab soup but this was better than any restaurant or seafood carry out soup I've ever tried. You owe it to yourself to make this soup!
