Cajun Pineapple Cake With Coconut Pecan Icing

ingredients
CAKE
2 cups flour, sifted
1 1/2 cup sugar
2 large eggs, beaten
1/2 teaspoon salt
2 teaspoons baking soda
1 teaspoon vanilla
1 can (20 ounce size) crushed pineapple, juice included
ICING
1 cup sugar
1 can (5.5 ounce size) evaporated milk
1 stick butter
1 teaspoon vanilla
1 cup shredded coconut
1/2 cup chopped pecans
directions
Preheat oven to 350 degrees F. Lightly grease and flour a 13 x 9 x 2-inch baking pan.
For Cake: In a large bowl combine flour, sugar, eggs, salt, baking soda, vanilla, and crushed pineapple with juice. Mix by hand until frothy and well-mixed.
Pour into prepared baking pan and bake in preheated oven for 20 to 25 minutes or until golden brown on top. While cake is baking, prepare icing.
For Icing: In a medium saucepan, combine sugar, evaporated milk, and butter. Cook over medium heat, stirring constantly, until mixture comes to a boil. Continue to stir and boil for exactly 4 minutes.
Remove from heat and stir in vanilla, coconut, and pecans. Spread warm icing over cake as soon as it comes out of the oven. Store in pan.
