1 box (18.25 ounce size) lemon cake mix
1 small box lemon or vanilla instant pudding mix
1/4 cup oil
2 eggs
1 cup Mountain Dew soda (or other lemon-lime or citrus soda)
powdered sugar
Preheat the oven to 350 degrees F. Grease and flour a Bundt or tube cake pan.
Combine the cake mix, pudding mix, oil, and eggs in a mixing bowl. Beat on low speed with an electric mixer until combined. Slowly mix in the Mountain Dew.
Transfer the cake batter to the prepared pan. Place in the oven and bake at 350 degrees F for 35-40 minutes or until the cake tests done.
Let the cake cool in the pan for 10 minutes then invert onto a wire rack and remove the cake to cool completely.
Sprinkle the cake with powdered sugar. Store the cake in an airtight container.

We make this cake for my husbands birthday every year. He claims it is much better than plain ole box cake alone. It is very moist and tastes amazing!
What size of instant pudding mix do you use and if cake mix has pudding in it, do you still use the box of pudding?
I will try this out for new years!
