ingredients
1 1/2 cup flour
1 cup sugar
3 tablespoons cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons vegetable oil
1 tablespoon white vinegar
1 teaspoon vanilla extract
1 cup cold water
directions
Preheat oven to 350 degrees F.
Sift dry ingredients into 8X8" pan. Make 2 depressions in the dry ingredients. 1 for each: oil, vinegar and vanilla. Pour water over all and mix thoroughly with a fork to moisten all ingredients.
Bake 30 minutes or until a toothpick inserted in the center comes out clean.

This recipe is super simple and would be wonderful for the children to help make. The results are pretty good considering the cake contains no eggs. Generally speaking, the cake is quite moist and flavorful. A bit of Cool Whip greatly enhances it.
