1 chicken 2 quarts water 1 onion, chopped 2 cups cubed cooked ham 3 potatoes, diced 32 ounces diced tomatoes 10 ounces frozen lima beans, partially thawed 10 ounces frozen whole kernel corn, partially thawed 2 teaspoons salt 1 teaspoon sugar 1/4 teaspoon freshly ground black pepper 1/2 teaspoon seasoned salt
In a crockpot combine chicken with water, onion, ham, and potatoes. Cook, covered, on LOW for 4 to 5 hours or until chicken is done. Lift chicken out of pot; remove meat from bones. Return chicken meat to pot.
Add tomatoes, beans, corn, salt, seasoned salt, sugar and pepper. Turn control to HIGH. Cover and Cook on HIGH 1 hour. Serve in large individual bowls.
I was disappointed by this recipe. I live in Atlanta and have had Brunswick Stew many times before. Although it had a good Brunswick Stew flavor, it turned out more like a thin broth than a thick stew. I'm not sure what to suggest for this recipe as it has huge amounts of starch. It should thicken but after six, seven, eight hours it's still watery. What did I do wrong?
CDKitchen Note: some of the measurements are vague (1 chicken, 3 potatoes) so perhaps the submitter of the recipe used larger sizes of those ingredients which would yield more bulk and less liquid per serving.
