Spicy Thai Peanut Baked Chicken

ingredients
1/2 cup milk
2 pounds chicken pieces with bone
1 packet spicy Thai peanut bake (buy in Asian grocery store)
directions
Preheat oven to 350 degrees F.
In a small bowl, place milk. Moisten each chicken piece well with milk. In a plastic bag, pour spicy Thai peanut bake. Shake each piece of chicken in the bag with the Thai peanut bake until well coated.
Place in ovenproof baking dish, sprayed with non-stick cooking spray. Sprinkle any excess peanut bake over top of chicken. Bake until done, about 35-40 minutes. Serve with steamed or fried rice.

This recipe is SO easy and you do not even need to bother with the milk. Buy the Thai Spicy Chicken packet from an Asian store or even our local Publix carries this. Wash the chicken and put the coating in a bowl. Coat chicken by turning it over and over in the coating. Line a baking pan with foil for easy clean up. Then bake at recommended temperature for 25 minutes if using boneless chicken. (Pkg says 20-25 but 25 makes it a little crispy). It's SO quick and easy -- I rate the difficulty as a "1" and not a "3" You can have your whole meal ready in about 35 mins if you get some Asian rice going in the microwave
