6 chicken drumsticks
6 chicken breast halves
1 cup plain nonfat yogurt
vegetable oil or cooking spray
1 cup dried Italian seasoned bread crumbs
1 cup all-purpose flour
1 tablespoon Old Bay seasoning
1/2 teaspoon garlic powder
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/8 teaspoon black pepper
Preheat the oven to 400 degrees F. Lightly grease a rimmed baking sheet or line with parchment paper.
Remove the skin from the chicken. Place the chicken in a large bowl of ice water and let chill for 10 minutes.
Place the yogurt in a shallow dish.
Combine the bread crumbs, flour, and seasonings in another shallow dish.
Remove the chicken pieces from the ice water and dry off. Dredge them in the yogurt, coating completely. Then, dredge them in the breadcrumb mixture, patting the crumbs so they adhere.
Transfer the chicken to the baking sheet.
Lightly spray the chicken pieces with vegetable oil or cooking spray. Place the chicken in the oven and bake at 400 degrees F for 1 hour or until cooked through, turning the chicken every 20 minutes.
Serve immediately.
