ingredients
3 pounds fryer chicken
3 cloves garlic, peeled
2 teaspoons salt
1/4 cup oil
1 teaspoon black pepper
3 tomatoes, chopped
1 onion, chopped
1 Serrano pepper, chopped
3 bay leaves, crushed
Spanish rice, for serving
refried beans, for serving
directions
Place chicken, garlic, and salt in pot. Cover with water and boil until tender.
Skin, bone, and shred chicken and place in skillet with oil. Saute. Add remaining ingredients; simmer about 10 minutes, covered.
Serve with Spanish rice and refried beans.
