A can of cream of mushroom soup can be a real dinner saver. It works great in casseroles and can turn into a sauce or gravy in a pinch.

Chicken pieces are oven-roasted and glazed with mixture of garlic, ginger, soy sauce, tomato sauce, and honey.
4 chicken thighs
4 chicken drumsticks
4 chicken wings
salt and pepper
2 tablespoons cooking oil
2 medium onions, chopped
Glaze
4 tablespoons tomato sauce
2 teaspoons Worcestershire sauce
1 tablespoon honey
2 tablespoons vinegar
1 tablespoon soy sauce
2 cloves garlic, finely chopped
1 small piece fresh ginger, finely chopped
Preheat oven to 400 degrees F.
Put the chicken pieces in a roasting dish and sprinkle with salt and pepper. Trickle with oil. Bake for 15 minutes, until chicken skin is starting to get golden.
Meanwhile mix all the ingredients for the glaze in a small bowl. Pour the glaze over the chicken and sprinkle onion over the top. Put back in the oven for another 10 minutes turning over the pieces of chicken halfway through the cooking time. The chicken is ready when it is a shiny dark brown.

This was good, but as another reviewer states, it takes about double the amount of time indicated in the recipe to bake. Use lots of chopped onions. They fall to the bottom when you flip the pieces and soak up the delicious glaze.

This is great - EXCEPT... there wasn't enough of the sauce. I had to double it to coat the chicken enough. Also it took way longer than the cooking time. Took more like an hour. Will totally make again though just need to remember to double the sauce.

I changed the ingredients to be more low-carb and sugar free. Instead of tomato sauce I used Heinz One-Carb Ketchup, that took care of the honey as well. Otherwise I followed the directions pretty closely and the dish turned out very well. I was surprised at how quickly it got done as I always have trouble with getting chicken cooked through to the bone. I will make this again.
