Bahamian Chicken
- add review
- #58753
ingredients
3 pounds whole chicken, cut up and skinned
1/2 cup butter
1/2 cup honey
4 not too ripe bananas
directions
In a cast iron skillet, melt the butter, then add the honey. Add chicken pieces. Lower the heat a bit, and cook for 20 minutes turning the chicken at least 4 times.
Preheat oven to 250 degrees F. Add sliced bananas to the skillet, cover, and bake for 45 minutes. If there is too much liquid at the end of baking, you can add 1/4 to 1/2 cup thin cream to make a sauce. Serve over plain rice.

My whole family thought this was just ok, don't think I will make it again.
What didn't you care for about it? More information would be helpful to other readers.

It was good... didn't care for the bananas because they turned out super mushy and soaked up way too much honey. It was good though with just eating the chicken and rice

This recipe is very very yummy! The chicken has such a fabulous flavor and my kids are banana-freaks so they couldn't wait to dig in, they were not disappointed and neither was I. The smell of the honey and butter cooking is incredible, mouthwatering and drool inducing. After one attempt this is already a family favorite, my boys keep asking me when I am making "that Nana-Chicken" dinner again. The only deviation from the recipe on my behalf was using 4 boneless, skinless breasts, cut up into large bites. I had to reduce the skillet and oven time just a little because the boneless chicken cooked fast. I think it was about 15 minutes in the skillet and 35 minutes in the oven.

This recipe is awesome! For the amount of honey it calls for, it really isn't overly sweet. With a sprinkle of salt, it actually almost takes on a savory flavor. Use real butter if you can, it'll enhance the taste greatly.
