Tropical Chicken

ingredients
1 teaspoon ground ginger
2 tablespoons packed brown sugar
salt and pepper
1 cup peanut oil
1 cup orange juice
1/4 cup lemon juice
1/4 cup lime juice
1 teaspoon garlic, crushed
1 teaspoon soy sauce
1 whole chicken, cut in serving pieces
directions
For Marinade: Combine ginger, brown sugar, salt and pepper in a bowl. Add peanut oil, orange juice, lemon juice, lime juice, garlic and soy sauce. Mix thoroughly.
Place chicken in marinade in an air-tight container. Refrigerate overnight or freeze until ready to use.
Drain chicken, reserving marinade. Bake at 350 degrees F for 45 to 60 minutes or cook on a barbecue grill.
If using a grill, place marinade in a saucepan and bring to a boil. Use marinade to baste chicken while barbecuing.
