Slow Cooker Lemongrass Chicken

ingredients
3 pounds whole chicken, giblets removed
2 lemongrass stalks, sliced in rounds
1 small onion, finely chopped
1 pound fresh mushrooms, sliced thin
1 cup water
1/2 cup heavy cream
2 tablespoons crushed red pepper flakes
directions
Add half the sliced lemongrass to the chicken cavity. Place the chicken in the crock pot, breast side up.
Sprinkle the remaining sliced lemongrass around the chicken along with the onion and mushrooms. Add the water, heavy cream, and sprinkle everything with the red pepper flakes.
Cover the crock pot and cook on low for 4-6 hours or until the chicken is cooked through.
Remove the chicken using tongs or two slotted spoons to a cutting board. Cut the chicken into serving pieces. Serve with the sauce from the crock pot (it can be thickened with a cornstarch slurry if you wish).
