Bread Machine Multigrain Wheat Berry Bread

ingredients
11 ounces cold water
2 tablespoons margarine
1 cup white flour
1 1/2 cup whole wheat flour
1/2 cup seven grain cereal (to which flax seed has been mixed in)
1 tablespoon wheat gluten
1 tablespoon powdered milk
2 tablespoons sugar
1 1/2 teaspoon salt
2 1/2 teaspoons bread machine yeast
Berries
1/4 cup wheat berries (found at health food/specialty food store)
1/2 cup boiling water
directions
Set on "French bread" cycle.
Meanwhile after you have started this, prepare the wheat berries: Add the wheat berries (whole wheat kernels) to the boiling water in a saucepan, and put the lid on. Turn the heat down to minimum and let it simmer for 90 minutes.
Dump the cooked wheat berries into a sieve and run cold water over them to cool them off. Shake the sieve to get rid of as much excess water as possible.
When the bread machine beeps at mid cycle (as if you were adding raisins or nuts) throw the wheat berries in. On my machine this is after an hour and 40 minutes.
The bread is chewy, crunchy, nutty and flavorful. (And good for you too!)
