Take 1 roll crescent rolls, spread with fingers to fit ungreased bottom of 11x15 pan. Mix cream cheese, egg yolk, sugar and vanilla and spread over the top of the crescent. Take other crescent roll and spread with fingers on wax paper to fit over filling. Lay top crescent over filling while still attached to wax paper. Peel off wax paper. Brush top with a bit of egg white, sprinkle lightly with cinnamon sugar and nuts. Bake for 20 minutes at 350 degrees.
