Yellow cake mix forms the crust for the sweet cream cheese layer in these slightly gooey and completely delicious dessert bars.
Bars
1 box (18.25 ounce size) yellow cake mix
1/2 cup butter, melted
1 large egg
Filling
8 ounces cream cheese, softened
1 pound confectioners' sugar
3 large eggs
1 teaspoon vanilla extract
Preheat the oven to 350 degrees F. Grease a 9x13 baking dish.
In a bowl, stir together the cake mix, melted butter, and egg. Mix well then press the crust mixture into the bottom of the greased baking dish.
In a mixing bowl, combine the cream cheese, confectioners sugar, eggs, and vanilla. Mix on medium speed with an electric mixer until smooth. Pour the cream cheese mixture over the crust and spread evenly.
Place the baking dish in the oven and bake at 350 degrees F for 45 minutes or until the top is lightly browned.
Remove the pan from the oven and let cool on a wire rack before cutting into squares.
Store leftovers in the refrigerator in a covered container for up to 4 days.

Excellent recipe - easy and quick! The top browned nicely, it was easy to cut into bars, and the consistency was just right. My family loves these.

I have used this recipe for years, however, the cooking instructions are different. I was taught to preheat/bake at 400 for the first 20 minutes then drop heat to 325 til edges have risen and topping/filling is golden brown, about 35-45 minutes longer. Maybe that might help tighten up the topping. It's the gooey butter cake recipe so many of us love. Try different cake bases. This is Fun Food.

I rated this recipe 5 because it is an easy and tasty recipe with one exception in the ingredients. The filling was a little too runny , but I feel 2 eggs will make it just right other than 3. I think 2-8 oz bars of cream cheese may make it a little to stiff; harder to spread. I took a picture with my cell phone and I hope it is accepted.
I recommend using only two (2) eggs; using three makes it too gooey.

this recipe takes FOREVER to solidify. It makes me question whether or not there was enough cream cheese (2 8oz vs the noted 1 8oz). This recipe should be modified.
