Duck in Orange Raisin Sauce

ingredients
4 pounds duck pieces
1/2 teaspoon salt, divided
1/2 teaspoon ground black pepper
1/4 cup butter
2 tablespoons flour
1/8 teaspoon ground cinnamon
1 dash ground ginger
1 1/2 cup orange juice
1/2 cup raisins
1 cup orange sections
4 cups hot cooked rice
directions
Wash duck and pat dry. Sprinkle duck with half the salt and all the ground pepper.
In a skillet, melt butter over low heat. Brown duck lightly then remove duck and set aside.
In a small bowl, combine flour, remaining salt, cinnamon, and ginger. Remove the fat in the pan and stir mixture into the pan drippings until smooth.
Gradually stir in orange juice. Continue to cook, stirring constantly, until sauce is smooth and bubbly and begins to thicken. Return duck to the skillet and add raisins.
Cover and cook over low heat for about 45 minutes, or until duck is tender and cooked through. Add orange sections and heat through.
Serve duck with hot cooked rice and the sauce.
