Ducks are oven-roasted with a spicy barbecue sauce baste.
2 large ducks or grouse, quartered
1/4 pound butter
6 ounces chili sauce
7 ounces spicy ketchup
2 teaspoons salt
1/4 teaspoon black pepper
2 tablespoons white vinegar
1/2 cup water
Preheat the oven to 325 degrees F.
Place the quartered birds, skin side up, on a rack in a shallow roasting pan.
Melt the butter in a small pan over medium heat. Add the chili sauce, ketchup, salt, pepper, vinegar, and water. Mix well and bring to a simmer. Reduce heat to lowest setting and keep warm.
Place the birds in the oven and baste with the margarine mixture every 15 minutes for 45 minutes or until cooked through (use a meat thermometer to test doneness).
Serve immediately.
