Chow Fun (Fried Broad Noodles) with Duck and Green Beans

ingredients
1 pound fresh noodles (or equivalent dried)
1/2 pound leftover barbecued duck (more or less)
1/2 pound green beans
2 cloves garlic (or more)
1 slice ginger (size of S.S. quarter or more)
2 teaspoons light soy sauce
4 tablespoons oil
3 tablespoons brown bean sauce
2 teaspoons sesame oil
directions
Shred or dice leftover duck. Cut green beans into 1 inch length. Prepare noodles according to package directions. Drain.
Heat 1 Tbsp oil to almost smoking. Add green beans. Stir fry for 3-4 minutes. Remove green beans from wok/pan.
Heat 1 Tbsp oil to almost smoking. Stir fry garlic and ginger in oil for about 30 seconds. Add duck. Stir fry duck in same oil as garlic and ginger. Add 1 Tbsp brown bean sauce to duck as it stir fries. Remove duck to same bowl as green beans.
Heat 2 Tbsp oil to almost smoking. Add cooked noodles. Stir fry noodles for about 3 minutes. Add duck and green beans to noodles. Add remainder of brown bean sauce to noodles. Add soy sauce and sesame oil to noodles. Stir fry everything to blend flavors.
NOTES: This is easier and faster than the instructions might indicate.
