Angel Hair With Tomatoes, Basil And Ricotta Salata Cheese

ingredients
3 tablespoons extra virgin olive oil
1 clove garlic, minced
1 can (28 ounce size) Italian plum tomatoes
2 teaspoons salt
1/2 teaspoon crushed red pepper flakes
1 box angel hair pasta
1 tablespoon fresh Italian parsley, chopped
3 tablespoons fresh basil, chopped
8 tablespoons ricotta salata cheese*
directions
Bring a large pot of water to a boil.
Heat olive oil in a large skillet. Add garlic and saute until golden. Add tomatoes and crushed red pepper. Season with salt and simmer 5-10 minutes.
Cook pasta according to package directions. Drain. Add hot pasta to skillet with sauce. Add herbs and mix well. Add ricotta cheese. Mix again.
Transfer to a serving platter or bowl and serve.
* Ricotta salata cheese is also sold as pressed ricotta cheese.
