The pasta isn't the only angelic thing about this dish. Pine nuts, olive oil, and parmesan bring loads of fresh flavor to noodles and sauteed spinach.

3/4 cup pine nuts
1/3 cup olive oil
6 cloves garlic, minced
1/2 teaspoon dried crushed red pepper
3/4 pound angel hair pasta
3 pounds fresh spinach, washed & stemmed
3 tablespoons butter
1/2 cup grated Parmesan cheese
1/8 teaspoon salt
1/8 teaspoon black pepper
Saute pine nuts in olive oil until golden. Remove nuts and set aside. In same oil, saute garlic and red pepper for 3 minutes; set aside. Cook pasta per pkg directions until tender and drain.
Reheat oil containing garlic and pepper; add spinach and saute until wilted (about 3 minutes.) Stir in butter. In large bowl, toss pasta, spinach, pine nuts and cheese. Add salt and pepper and serve.

This dish was 'Magnifico' when I made it! But in order to make it even tastier, try using Parmegiano Romano cheese (instead of only Parmesan). The next time I make it, my husband's suggestion is that I add in some diced Prosciutto, and some cubed Portabella (sautéed) mushrooms. Mamma Mia!, this sure sounds good to me!

This is one of my favorite side dishes because it goes with lots of other dishes really easily. I've served it with fish, chicken, steak, you name it. I make this at least once a week because it's so easy and tastes really good. It's a bit calorie heavy but I usually serve it with something lighter as the main dish like grilled fish or chicken so it balances out.
